Jimmy Daniel Eubanks was born on September 29, 1943, in Winnsboro, LA to Clinton "Woody" and Bertha Eubanks. The thirteenth of sixteen children, he grew up working in cotton fields on his family's farm. He went to school in Fort Necessity, LA before working as a police officer for the Winnsboro City Police Department. Throughout his career, he also worked as an industrial pipeline X-ray technician for several companies including Tube Turns, ran his own carpet cleaning business, and eventually retired from the Cy-Fair ISD operations department.

He met the love of his life, Jo Ann, after being introduced by her sister Judy in 1980. Jimmy and Jo Ann began their relationship as friends until a sweet goodnight kiss set the stage for their love to blossom. They married on March 7th, 1981, and were blessed with a beautiful love story that evolved over forty-four years. Jimmy and Jo Ann were the perfect match as they balanced and supported each other while keeping their faith in Christ as the center of their beautiful marriage.

In February 1982, they adopted their son, Jerry Dale Eubanks, completing their family as "The Three J's". Fatherhood was a passion for Jimmy, as he was engaged in all aspects of Jerry's life including coaching little league baseball, supporting his Eagle Scout journey, and helping him raise chickens and rabbits for FFA. God surely knew Jimmy was always meant to be Jerry's father and the role model he needed throughout his life.

Jimmy always loved being outdoors, whether he was fishing, gardening, or barbecuing with family and friends. He was proud to share the tomatoes, black eyed peas, squash, and other vegetables he grew next to their home. One of his greatest joys in life was spending quality time with close friends and neighbors playing cards and dominoes or simply sharing a meal and fellowship, always followed by a cup of coffee. He would lovingly refer to their street, Escher Road, as "Lutheran Lane" as seven families from St. Timothy have resided there over the years. Anyone who knew Jimmy would certainly call him a jokester and knew he would tease and "pick on" those he loved the most. Jimmy had a huge heart and love for animals, especially his poodle Susie, Sugar dog, and most recently, Escher the cat. Jimmy always had a knack for fixing things and helping others solve problems when they came to him for advice. Jimmy enjoyed most sports including baseball, basketball, and football. He loved cheering on the Houston Astros and the UT Longhorns in support of his niece Lauren.

Jimmy became a member of St. Timothy Lutheran Church in 1983 where he was able to strengthen his relationship with the Lord. While at St. Timothy, he served on the board of trustees, the board of elders, filmed as part of the AV team, and supported fundraising events as a member of the "BBQ Bubbas." Jimmy loved his church family as if it were an extension of his own.

Jimmy left this life and entered into the waiting arms of his Lord and Savior, Jesus Christ on Wednesday, April 16, 2025, at home in Cypress, TX at the age of 81. He is survived by his devoted wife Jo Ann, and loving son Jerry. He is also survived by his niece/goddaughter Lauren Sandell (husband Jon) who he loved as if she were his own. He is also survived by his brothers Jody Eubanks (wife Sue), and Tim Eubanks (wife Bobbie), mother-in-law Annie Koopmann, sisters-in-law Ann Eubanks and Judy Larkin, brothers-in-law Jerry Koopmann (wife Shellie), and Jeffrey Koopmann (wife Sheila), as well as a host of many other loving relatives, godchildren, neighbors, and friends who he considered an extension of his family.

Jimmy is preceded in death by his parents, "Woody" and Bertha Eubanks, father-in-law Wilburn Koopmann, and siblings, Loyd Eubanks, Louise Parrott, Henry Eubanks, Elton Eubanks, Elvin Eubanks, Edgar "Curly" Eubanks, Edna Jean Carroll, Florine Adcock, Clinton Eubanks Jr, Charles Ray Eubanks, Kenneth Eubanks, Gary Eubanks, infant Marion Eubanks, as well as many nieces, nephews and other relatives.

The family would like to specifically thank special friends, Carroll and Mary Canada, Steve Languirand, Pastor Jonathan, and Aspire Hospice for the exceptional care given to our beloved Jimmy and the unwavering support they have shown Jo Ann, Jerry and their family. Thank you also to Pastor Henze and the pastoral staff of St. Timothy Lutheran for their visits and prayers during this difficult time, and to all our relatives and friends who called, visited, and sent meals, cards, and prayers.

In lieu of flowers, the family asks that donations be made in Jimmy's honor to St. Timothy Lutheran Church. A Celebration of Life will be held on Monday, April 28th, 2025, at 11am at St. Timothy Lutheran Church, 14225 Hargrave Rd, Houston, TX 77070. There will be a time for visitation with the family prior to the service at 10am and a reception will follow the service in the Life Center. Interment will follow the reception at Klein Memorial Park in Magnolia, 14711 FM 1488, Magnolia, TX 77354.
